Cranberry Bean Sprouts: How to Sprout and Cook Them

Cranberry bean sprouts are creamy and beany, great in soups and stews. One rule matters most: always cook them well. Like kidney beans, cranberry beans contain a natural lectin that cooking destroys. Soak 6 to 12 hours, rinse twice a day, and cook the sprouts after 2 to 3 days.
